Instructions
1: Dice half of a bag of defrosted frozen peaches. The other half of the bag is cut into halves for the top of the pancakes. 2: In a small bowl, add diced peaches with 1 tbsp flour, 1 tbsp brown sugar, and 1 tsp of cinnamon. Repeat for the peach halves and set aside. 3: In a large bowl, combine eggs, buttermilk, melted butter, and brown sugar; whisk together. 4: Mix dry ingredients and slowly add to the wet mixture, folding in diced peaches and setting aside. 5: Make the crumb by warming flour for 3 minutes in a microwave, then mix with cinnamon, brown sugar, and softened butter until crumb-like consistency. 6: Cook peach halves in a small pan with butter for 5-8 minutes until soft and juicy, then transfer to a bowl. 7: Grease a large pan with butter, scoop a little more than 1/4 cup of pancake batter into the pan, and cook for 2 minutes on each side until golden brown. 8: Serve pancakes topped with peach halves and crumb mixture, drizzling with peach juices from the pan.View original recipe
