
No Bake Cannoli Mini Cheesecakes

These Cannoli Cheesecake bites are delicious mini treats perfect for any get-together. This no-bake recipe yields 18 mini cheesecakes with a delightful filling made from mascarpone, cream cheese, and ricotta, all topped with a chocolate drizzle.

What you need

tsp vanilla extract

tbsp unsalted butter

oz cream cheese

cup heavy whipping cream

cup powdered sugar

cup graham cracker crumbs
cup ricotta

oz chocolate glaze

oz mascarpone
Instructions
1: Line muffin pan with baking cups. 2: Combine graham cracker crumbs and melted butter in a medium bowl. Using a small cookie scoop, fill each baking cup with crumbs and press down. Place in the fridge while making the filling. 3: Wrap whole ricotta in a paper towel and pat it dry. 4: Beat together mascarpone cheese and cream cheese till smooth. Add in ricotta and beat till smooth. 5: Slowly add in powder sugar and beat till combined. 6: In a medium bowl, place heavy whipping cream and vanilla extract. Whisk on high speed till stiff peaks form. 7: Fold heavy whipping cream into cannoli mixture. Fold in mini chocolate chips. 8: Using a small cookie scoop, fill baking cups with cannoli mixture. Place in fridge for minimum 6 hours or overnight. 9: Place extra cannoli filling in a piping bag and refrigerate. 10: Pipe cannoli filling on top of set cheesecakes and optionally drizzle with melted chocolate on top.
