
Double Chocolate Cookie Sandwiches

Delicious and quick-to-bake double chocolate cookie sandwiches filled with vanilla buttercream. Perfect for chocolate lovers and great for pairing with a glass of milk.

What you need

tsp baking soda

cup flour

tsp vanilla extract

tbsp unsalted butter

tbsp milk

cup semi sweet chocolate chips

cup cocoa powder

tsp salt

cup powdered sugar

cup light-brown sugar
Instructions
1: Preheat oven to 350°F and line a large cookie sheet with parchment paper. 2: Beat butter and sugar until smooth. 3: Add in the egg and vanilla extract, and combine. 4: Whisk dry ingredients together and beat into wet ingredients. 5: Fold in chocolate chips. 6: Using a small cookie scoop, roll cookies into balls and place on baking sheet, leaving a couple of inches between each. 7: Bake for 10-12 minutes. Five minutes into baking, flatten the cookie slightly with the back of a measuring cup. When removed, use a round cookie cutter and in a circular motion give the cookie a spin to make it perfectly round. 8: Let the cookies cool for about 20-30 minutes before filling with vanilla buttercream. 9: Make the buttercream by beating butter until smooth, adding vanilla extract, then powder sugar and combining, and finally adding in milk and beating until smooth. 10: Place buttercream in a piping bag, pipe frosting on the bottom of a cookie, and press another cookie on top.
