What you need
egg

tsp cinnamon

cup sugar

oz active dry yeast

cup granulated sugar
cup vegetable oil

tsp cream of tartar

cup semisweet chocolate chips

cup all purpose flour

tsp vanilla extract

unsalted butter

cup milk

cup heavy cream

egg white

tsp ground nutmeg
Instructions
1. Microwave milk for 1 minute till it’s at 110 degrees F. Combine yeast and stir. Let sit for 10 minutes. Yeast should foam. 2. In a stand-in mixer add melted butter, sugar, vanilla extract, cinnamon and nutmeg, blend together. 3. Add in yeast mixture and eggs. 4. With a dough hook. Slowly add in 1 cup of flour at a time till combine. Dough should become less sticky and pull away from the bowl into a nice ball. 5. Let sit in a bowl with a towel over it for about 2 hrs till it doubles in size. 6. Roll out dough on a floured surface and cut donuts with a biscuit cutter or cup. 7. Place donuts on a parchment paper baking sheet and cover with a towel for another 45 minutes. 8. While dough rises in a large pot heat vegetable oil to 365 F. 9. Fry for about 90 sec. on each side & put on a paper towel cooling rack. 10. While cooling, make marshmallow fluff. Separate 4 egg whites and add sugar and cream tartar and stir in a mixing bowl. Start a double boiler with about an inch of water and let simmer. Take bowl and place on your double boiler and stir constantly till mixture is at 160 degrees F. Beat mixture till stiff peaks form, about 3-5 minutes, add in vanilla extract and beat for another 2 minutes. Place fluff in pipping bag 11. Make ganache by microwaving chocolate chips and heavy cream for Appx. 1 minute and stir. 12. Pipe marshmallow fluff in donuts and cover tops with ganache and Graham crackers crumbs.View original recipe
