Peach Crumb Cake

This peach crumb cake is super moist and perfect for breakfast! It’s a one layer cake, and super easy to make. It features a delicious crumb topping, fresh or frozen peaches, and a flavorful cake base.

What you need

tsp baking powder

cup granulated sugar

cup sour cream

cup flour

cup brown sugar

tbsp unsalted butter

tbsp ground cinnamon

tsp vanilla extract

cup buttermilk

tbsp milk

tsp salt

cup powdered sugar

lb peach

organic eggs
Instructions
1: Preheat oven to 350°F. Line and grease an 8x8 baking dish with parchment paper. 2: Make crumb by combining crumb ingredients (butter, flour, brown sugar, granulated sugar, cinnamon) in a bowl using a fork. Set aside. 3: Dice peaches in a bowl and combine with brown sugar, flour, and cinnamon together. Toss peaches until fully covered. 4: Make cake by combining brown sugar, granulated sugar, cinnamon, and melted butter in a bowl. Whisk together. 5: Add in both eggs and vanilla extract, whisk together. Add in sour cream and combine. 6: Fold in dry ingredients with a spatula until thick. Add in buttermilk and combine with spatula or stand-in mixer with paddle attachment. 7: Pour batter into prepared baking dish. Layer peaches on top evenly and pour crumb on top, leaving a little crumb to the side. 8: Bake for 30 minutes, then sprinkle remaining crumb on top and bake for an additional 15 minutes. 9: Remove from oven and let cool.
