This peach crumb cake is super moist and perfect for breakfast! It’s a one layer cake, and super easy to make. It features a delicious crumb topping, fresh or frozen peaches, and a flavorful cake base.
1: Preheat oven to 350°F. Line and grease an 8x8 baking dish with parchment paper.
2: Make crumb by combining crumb ingredients (butter, flour, brown sugar, granulated sugar, cinnamon) in a bowl using a fork. Set aside.
3: Dice peaches in a bowl and combine with brown sugar, flour, and cinnamon together. Toss peaches until fully covered.
4: Make cake by combining brown sugar, granulated sugar, cinnamon, and melted butter in a bowl. Whisk together.
5: Add in both eggs and vanilla extract, whisk together. Add in sour cream and combine.
6: Fold in dry ingredients with a spatula until thick. Add in buttermilk and combine with spatula or stand-in mixer with paddle attachment.
7: Pour batter into prepared baking dish. Layer peaches on top evenly and pour crumb on top, leaving a little crumb to the side.
8: Bake for 30 minutes, then sprinkle remaining crumb on top and bake for an additional 15 minutes.
9: Remove from oven and let cool. Drizzle icing and enjoy!
