A fun and easy no-bake recipe for mini cheesecakes featuring a graham cracker crust, a creamy funfetti cheesecake filling made with cream cheese and yellow cake mix, topped with homemade whipped cream and sprinkles.

What you need

oz unsalted butter

cup sugar

oz cream cheese

cup rainbow sprinkles

cup heavy whipping cream

oz cool whip

cup graham cracker crumbs

cup powdered sugar

tsp vanilla extract
Instructions
1. Beat cream cheese for 2 minutes until smooth, with a hand-held mixer or stand-paddle mixer. 2. Add sugar and beat until combined. 3. Add 1/2 cup of the yellow cake mix at a time to the cream cheese mixture, until fully combined and set aside. 4. Melt butter in intervals of 15 seconds to start to make graham cracker crust. Takes about 1 minute. 5. Add melted butter in a medium bowl to graham cracker crumbs and stir. 6. Press the crust into your cupcake holders in your cupcake pan. Fill a little less than halfway. 7. Put graham cracker crust in fridge to firm up. 8. While crust firms up, slowly spatula in cool whip into cream cheese mixture and beat for another 3-5 minutes. 9. Add rainbow sprinkles and beat for another minute until combined and smooth. 10. Spoon funfetti cream cheese mix into cupcake holders and let sit in fridge for at least 4 hours to set. 11. When ready, make your homemade whip cream. Combine powder sugar, vanilla extract, and heavy whipping cream and whip for about 2-3 minutes. 12.
