These are super easy, not too messy of a clean up, which I love and super tasty! They are a creamy texture and you are going to think you are eating a birthday cake without having to bake it!
* Preheat oven to 350°F. Line a 12 cup muffin pan.
* Combine crushed vanilla wafers and melted butter. Scoop 2 tbsp in each cup. Press down. Bake for 10 minutes, remove and cool. Can put in fridge while making filling.
* Make filling by beating together cream cheese for two minutes till smooth. Add sugars and heat treated cake mix and beat till smooth. Remove and put in a bowl.
* Beat heavy whipping cream till stiff peaks form. Fold into cheesecake filling. Fold in rainbow sprinkles.
* Scoop about 2-3 tbsp of filling into each cup and smooth with back on spoon.
* Place in fridge overnight to set.
* Make whip cream by whisking together heavy cream, powder sugar and vanilla extract till stiff peaks form. Pipe onto cheesecakes, sprinkle additional rainbow sprinkles and enjoy!
