What you need

cup granulated sugar

cup flour

tbsp unsalted butter

tsp salt

tsp vanilla extract
tsp lemon zest

egg yolk

cup lemon juice

Instructions
1. Make double boiler first by filling a small pot with 2 inches of water. In a heat proof glass bowl add eggs, sugar, lemon juice , lemon zest and vanilla extract. Place glass bowl over simmering water and stir constantly for about 15 minutes till mixture thickens. 2. Remove from heat and stir in butter. Let sit at room temperature while you make the cookie dough. 3. Beat butter and 1 cup of powder sugar till smooth. 4. Add in egg, lemon zest and vanilla extract and combine. 5. Beat on low speed for two minutes till the flour is combine and then combine rest by folding with spatula or we knead the dough with our hands a little till we have a ball. Dough will be sticky. 6. Using a small ice-cream scooper, scoop dough into balls and using back of ice-cream scooper press down on dough creating a center hole. 7. Freeze dough for 25-30 minutes so cookies does not spread while baking. 8. Bake for 10-12 minutes. Remove from oven and place on cooling rack. Cool for 20-25 minutes. While they are cooling we put out lemon curd in the fridge. 9. Once cooled sprinkle the 1/8 powder sugar on top of the cookies and fill cookies with the curd! Enjoy.View original recipe
