Easy Blueberry Crumb Bars

Delicious and easy blueberry crumb bars, perfect for a beach day, breakfast, or a sweet treat. Features a buttery oat crumble crust, a fresh blueberry filling, and a lemon glaze.

What you need

cup old fashioned rolled oats

tbsp unsalted butter

cup powdered sugar

tsp vanilla extract

tbsp lemon juice

tsp all purpose flour

cup brown sugar
cup fresh blueberries

tbsp heavy cream

tsp table salt
Instructions
Preheat your oven to 350 degrees F. Line an 8x8 inch square pan with parchment paper or grease the pan well, and set aside. Crust: In a large bowl, whisk together oats, flour, brown sugar, and salt. Stir in melted butter and vanilla until it's a well-mixed crumble mixture. Set aside a little then half of the mixture; pour remaining into pan and press into an even flat layer with your hands. Set aside while you prepare the filling. Filling: In a medium bowl, toss blueberries, sugar, lemon juice, and flour until blueberries are completely and evenly coated. Pour mixture over top of crust and spread into an even layer. Crumble: Sprinkle the remaining crumble mixture over top of the blueberries as evenly as you can, and press down! Baking time: Bake for 30-35 minutes, until crumble and crust are golden and fruit is slightly bubbling. Let cool completely. We leave out for 30 minutes and then put into the fridge for a few hours before cutting! Once cooled we combined all glaze ingredients together and drizzle on top of the bars.
