Cinnamon Roll Cookie Cups

These cookie cups are quick to prepare and bake, perfect for a Saturday treat. They can be made in a standard or mini muffin pan.

What you need

cup light-brown sugar

cup flour

tsp vanilla extract

tsp baking powder

tbsp cinnamon
egg

tbsp unsalted butter

tbsp heavy cream

cup brown sugar

cup powdered sugar

tbsp ground cinnamon
Instructions
Preheat oven to 350 degrees F. Grease a muffin pan. Combine brown sugar and 8 tbsp melted butter and whisk together. Add egg and vanilla extract. Combine dry ingredients (flour, baking powder, 1/4 tsp salt, 1 tsp cinnamon) into a bowl and fold into wet ingredients. Scoop cookie dough into muffin pan and press down to make a cavity. Bake for 15-17 minutes for larger cups and 10-12 minutes for minis. When you remove cookie cups from oven, use the back of a cookie scoop to re-press down the cavity. Make filling by combining 8 tbsp melted butter, 1 cup light brown sugar, and 1 tbsp cinnamon. Place in a piping bag. Make drizzle by combining 1/2 cup powder sugar and 2 tbsp milk or heavy cream. Place in a piping bag. Pipe filling into each cookie cup and make a little swirl of icing on top!View original recipe
