Easy carrot cake cookie sheet sandwiches made with store-bought carrot cake mix and a delicious homemade cinnamon cream cheese frosting. These semi-homemade cookies are perfect for Easter or any weekend baking.
1. Preheat oven to 325 degrees F.
2. In a bowl, combine cake mix, vegetable oil, and eggs.
3. Line a large 12x16 cookie sheet with parchment paper.
4. Using a medium cookie scoop, scoop cookie dough onto the prepared cookie sheet.
5. Using a spatula, spread the cookie dough out evenly on the cookie sheet.
6. Bake for 10-12 minutes.
7. Remove from oven and let cool completely while you make the frosting.
8. For the frosting, beat cream cheese and unsalted butter together in a bowl until smooth.
9. Add powdered sugar, cinnamon, and vanilla extract to the cream cheese mixture and beat until smooth.
10. Once the cookie cake is cool, use a round cookie cutter to cut out individual cookies from the sheet pan. Save the leftover cookie edges for the topping.
11. Pipe cream cheese frosting onto the bottom of one cookie and place another cookie on top to create a sandwich.
12. (Optional) Pipe a little extra frosting on top of the cookie sandwich and sprinkle with the crushed pecan crumble (made by mixing crushed pecans and crumbled cookie edges). Enjoy!
