Cannoli Brownies

These super fudgy and easy-to-make cannoli brownies combine rich chocolate brownies with a creamy mascarpone-ricotta cannoli topping, finished with chocolate chips and an optional chocolate drizzle.

What you need

cup semi sweet chocolate chips

cup ricotta cheese

cup granulated sugar

cup all purpose flour
cup vegetable oil

tsp table salt

oz mascarpone

oz mini chocolate chips

oz dark chocolate bar

cup brown sugar

cup powdered sugar

cup cocoa powder

Instructions
For the brownies: Preheat oven to 350°F. Melt 1/2 cup semi sweet chocolate chips in the microwave and combine with vegetable oil. In a separate bowl, combine granulated sugar, brown sugar, eggs, and 2 1/2 tsp vanilla extract. Whisk for 2 minutes and then use a handheld mixer for 3 minutes until the mixture doubles in size. Pour this into the chocolate-oil mix and beat together. Add in cocoa powder and 1/2 tsp salt, then mix. Slowly fold in the all-purpose flour. In a 9x9 baking dish lined with parchment paper, spread the brownie mixture evenly. Bake for 30 minutes. Take out of the oven and let cool completely. For the cannoli topping: While the brownies are cooling, combine strained whole milk ricotta cheese, mascarpone cheese, 1 tsp vanilla extract, powdered sugar, and 3/4 cup mini chocolate chips. Beat until smooth and then place the mixture into a piping bag. Assembly: Pipe the cannoli topping on top of the cooled brownies. If desired, melt a 4 oz. chocolate bar for a chocolate drizzle on top. Finish with additional mini chocolate chips.View original recipe
