Blueberry Crumb Cookie Cups 🫐

These cookie cups are the perfect snack and super easy to whip together! Makes 12-14 large cookie cups. Can make 24 mini cups. Easy treat for the holiday weekend. Full recipe below.

What you need

cup flour
cup firmly packed brown sugar

cup granulated sugar

cup all purpose flour

tbsp lemon juice

tbsp unsalted butter

cup powdered sugar

tsp salt

tsp cinnamon

tsp vanilla extract

tsp baking soda

tbsp milk
pt fresh blueberries
egg

Instructions
Preheat oven to 350°F. Spray muffin pan with baking spray. Place melted butter in a medium bowl. Add both sugars and mix on low speed till smooth. Mix in eggs and vanilla extract till combine. Mix flour, baking soda and salt together. Slowly mix in flour mixture, 1/2 cup at a time. Spray muffin pans with baking spray. Scoop cookie dough into muffin pan using a medium ice-cream scooper and press down a cavity in the center of the cookie. Bake for 15-18 minutes. While baking make blueberry filling in a medium saucepan. Add blueberries, sugar and lemon juice. On medium heat stir till blueberries soften. Add in flour to thicken filling. Stir till combine. Turn off heat and make crumb. Make crumb by combining flour, sugar, cinnamon and melted butter. Using a fork combine together. Heat in microwave for 45-60 seconds. Remove and mix with fork. Remove cookie cups from the oven and let cool for about 10-15 minutes. Make drizzle by combining powder sugar and milk. Place in piping bag. Once cookies are cooled remove from the pan. Using a small spoon scoop berry filling into center of cookie cup. Top off with crumb and drizzle icing. Enjoy!View original recipe
