Berry Special Strawberry Shortcake Crunch Bars!

These remind me of the Strawberry Shortcake Good Humor Ice-cream bars as a kid that I would eat after going for neighborhood bike rides with friends. So tasty and easy to make! All you will need to make is below, with full instructions.
1. Preheat oven to 350 degrees F.
2. Add strawberry cake mix, butter, egg, vanilla extract in a bowl and mix till dough becomes thick like cookie dough. Do not follow cake box mix. Bake for 18-20 min.
3. Now make the strawberry crumble. Combined crushed Oreos. Strawberry gelatin powder and butter in a bowl and stir till combine. I crush the Oreos in a blender but you may put them in a closed plastic bag and bang on them with a rolling pin to crush as well. Set aside.
4. Remove cake from oven and let cool.
5. While cooling make whipped cream cheese layer. Beat cream cheese till soft, appx. 2 minutes. Add in powder sugar, heavy cream and vanilla extract and beat for another 3-5 minutes till smooth.
6. Once cake is cooled take whipped cream cheese layer and frost top of cake. Add strawberry crunch topping and add a strawberry to the top with half a vanilla Oreo. Enjoy!
