Banana Cinnamon Crumb Muffins

What you need

tsp vanilla extract

cup all purpose flour

tsp baking soda

tbsp maple syrup

tbsp unsalted butter

ripe banana

cup powdered sugar

tsp salt

tbsp heavy cream

cup granulated sugar

cup light-brown sugar
egg
Instructions
Preheat oven to 350° F. Grease 10 cups of a 12 cup muffin pan. This recipe makes 10 large muffins. To make the crumb: In a medium bowl add flour, brown sugar, cinnamon and melted butter. Combine with a fork. Set aside. To make the muffin: combine melted butter and sugars and beat with a hand mixer for two minutes till combined. Add egg and vanilla and continue to beat for two minutes. Add mashed bananas and mix for one minute. Slowly incorporate dry ingredients till fully combined. Using a small ice cream scooper, pour the first layer of batter into the muffin pan. Sprinkle on a layer of crumb and layer with more batter and then more crumb. Bake for 25-27 minutes till golden brown. To make the Glaze: while baking, make glaze by combining powder sugar, maple syrup and heavy cream in a small bowl, stir till smooth. Take muffins out of oven and let cool for five minutes and transfer to a cooling rack. Let sit for additional five minutes and pipe on glaze!View original recipe
