Hot Chocolate Ganache Cupcakes

What you need

tsp cream of tartar

egg white

tsp vanilla extract

cup water
cup vegetable oil

tsp salt

cup cocoa powder

cup heavy cream

cup sugar

cup all purpose flour

tsp baking soda

cup milk

tsp baking powder

cup semisweet chocolate chips

Instructions
Heat oven to 350° F. Line cupcake pan with baking cups. Combine dry cupcake ingredients in a bowl. Add wet ingredients, minus the boiling water. Mix for 2-3 minutes till wet and dry ingredients are combined. Use hand held or stand mixer. Add boiling water and stir together. Fill muffin cups 3/4 full. Bake for 18-20 minutes. Place on cooling rack. While cupcakes cool completely make marshmallow frosting. Put 4 eggs whites in a mixing bowl, add sugar and cream of tartar and stir for 2 minutes. Start a double boiler with about an inch of water and let simmer. Take bowl and place on your double boiler and stir constantly till mixture is at 160 degrees F. Beat mixture till stiff peaks form, about 3-5 minutes, add in vanilla extract and beat for another 2 minutes. Put in piping bag. Make ganache by boiling heavy cream and pouring over chocolate chips. Stir till it thickens. Place in piping bag. Once cupcakes are cool, scoop out a cavity in the center of the cupcake and pipe in the ganache. Pipe frosting on top and sprinkle crushed candy canes. For decoration we add a candy cane on the side of the cupcake and a little straw. Drink up!View original recipe
