Super Soft Banana Cinnamon Crumb Muffins

These banana cinnamon crumb muffins are so soft and moist! They take 25 minutes to bake and do not require a stand mixer. The maple glaze tops them off. This is my new favorite muffin!

What you need

tbsp maple syrup

cup powdered sugar

tsp salt

tsp baking soda

banana

tsp vanilla extract
egg

cup granulated sugar

tbsp ground cinnamon

cup light-brown sugar

cup all purpose flour

tbsp unsalted butter
Instructions
* Preheat oven to 350° F. * Grease 10 cups of a 12 cup muffin pan. This recipe makes 10 large muffins. * Make crumb: In a medium bowl add flour, brown sugar, cinnamon and melted butter. Combine with a fork. Set aside. * Make muffin: combine melted butter and sugars and beat with a hand mixer for two minutes till combined. Add egg and vanilla and continue to beat for two minutes. Add mash bananas and mix for one minute. Slowly incorporate dry ingredients till fully combined. * Using a small icecream scooper pour first layer of batter into muffin pan. Sprinkle on a layer of crumb and layer with more batter and then more crumb. Bake for 25-27 minutes till golden brown. * Make Glaze: while baking, make glaze by combining powder sugar, maple syrup and heavy cream in a small bowl, stir till smooth. * Take muffins out of oven and let cool for five minutes and transfer to cooling rack. Let sit for additional five minutes and pipe on glaze!View original recipe
