Cannoli Cake

This Cannoli Cake only takes 30 minutes to bake and is the perfect last minute Valentine’s Day Cake! It’s super moist and features chocolate chips inside the cake and in the cannoli filling.

What you need
tsp baking powder

tsp salt
cannoli shells

cup buttermilk

tbsp unsalted butter

cup granulated sugar

cup mini chocolate chips

cup powdered sugar

cup all purpose flour
egg
Instructions
Preheat oven to 350° F. Line two 9” square cake pans with parchment paper and grease the sides. In a large bowl combine dry cake ingredients, excluding sugar. Set aside. In a medium bowl beat butter with an electric mixer. Add in sugar and beat for 5 minutes. Add eggs and vanilla extract and beat till combine. Alternating milk and flour add in a little at a time till it is combined and smooth. Fold in chocolate chips. Pour half of the cake batter in each pan. Smooth with spatula. Bake for 25-30 minutes. Let cakes cool for 5 minutes and pop on to cooling rack. While cake is continuing to cool make your cannoli filling by drying out the ricotta by patting it down with a paper towel to get out any wetness. Fold in powder sugar and vanilla extract till smooth. Now fold In chocolate chips till combine. Pipe two cannoli shells with some filling. Set aside. Cut sides of cake and frost one layer of the remaining cannoli filling on top of the cake. Put second layer of cake directly on top and frost top layer. Sprinkle chocolate chips and add cannolis to top for decoration!View original recipe
