What you need

oz cool whip

tbsp vanilla pudding mix

tsp vanilla extract

cup sugar

cup vanilla wafer cookies

pt heavy whipping cream

banana

cup unsalted butter

oz cream cheese

cup powdered sugar
Instructions
1. Beat cream-cheese for 2 minutes till smooth, with a hand held mixer or stand-paddle mixer. 2. Add sugar and beat till combine. 3. Add 1/2 cup of the yellow cake mix at a time to the cream-cheese mixture, till fully combined and set aside. 4. Melt butter in intervals of 15 seconds to start to make vanilla wafer crust. Takes about 1 minute. 5. Add melted butter in a medium bowl to wafer crumbs and stir. 6. Press the crust into your cupcake holders in your cupcake pan. Fill a little less then half way. 7. Put wafer crust in fridge to firm up. 8. While crust firms up, add the pudding to cream cheese. Then slowly spatula in cool whip into cream-cheese mixture and beat for another 3-5 minutes. 10. Spoon cream-cheese mix into cupcake holders and let sit in fridge for at-least 4 hrs to set. 11. When ready make your homemade whip-cream! Whip cream: Combine powder sugar, vanilla extract and heavy whipping cream and whip for about 2-3 minutes! 12. Top off the Mini Cheesecakes with a sliced banana, the whip-cream, wafer crumbs and a full wafer and enjoy!View original recipe
