This creamy, delicious no-bake strawberry cheesecake is perfect for summer, featuring a thin graham cracker crust, a smooth cream cheese filling, and a fresh strawberry topping.

What you need

cup sour cream

cream cheese

cup heavy whipping cream

cup sugar

tsp lemon juice

tsp vanilla extract

strawberries

tbsp unsalted butter

cup powdered sugar
Instructions
In a medium bowl combine graham cracker crumbs and melted butter. Pour into a bottom-lined 8” spring form pan. Press crust down and up the sides. Make filling by beating cream cheese for two minutes till smooth. Add in powder sugar and beat till smooth. Add in sour cream and vanilla extract and combine. Transfer mixture to a small bowl and beat heavy whipping cream till soft peaks form. Fold cream cheese mixture into whipping cream till fully combine. Pour filling into pan over crust and smooth out. Put in fridge. Now slice your strawberries into a pyrex bowl, add sugar and lemon juice and stir till strawberries are completely coated. Close Pyrex with lid and place in the fridge. Cheesecake and strawberries should stay in fridge for minimum 6 hrs or overnight. Once cheesecake is set, pour strawberries on top of cake. Make homemade whip-cream or buy store bought and decorate!
