This one is so easy! It’s an apple spice brown sugar cookie with homemade apple pie filling! Must save. Full recipe below!

* Preheat oven to 350 degrees F. Grease a muffin pan. Make 10 muffin cups or 24 mini cups. Heat treat your “crumble topping” flour on a baking sheet for 5 minutes. * Combine brown sugar and butter and whisk together. Add egg and vanilla extract. * Combine dry ingredients into a bowl and fold into wet ingredients. * Scoop cookie dough into muffin pan and press down to make a cavity. Bake for 22 minutes for larger cups and 12 minutes for minis. Remove from oven to cool and make apples + crumble. You will have to press center down again when you take cookies cups out with an ice-cream scooper or back of a tablespoon, that is fine! They will look soft it’s ok. * In a sauce pan combine apples, brown sugar, apple pie spice, cinnamon, vanilla extract and lemon juice and let simmer, stirring frequently till thickens and softens. About 5-8 minutes. * Make crumble by combining brown sugar, flour and softened butter with a fork. * Scoop apples into center of cookie cup, add crumble and add a little drizzle!
