Delicious and quick-to-bake double chocolate cookie sandwiches filled with vanilla buttercream. Perfect for chocolate lovers and great for pairing with a glass of milk.

1: Preheat oven to 350°F and line a large cookie sheet with parchment paper. 2: Beat butter and sugar until smooth. 3: Add in the egg and vanilla extract, and combine. 4: Whisk dry ingredients together and beat into wet ingredients. 5: Fold in chocolate chips. 6: Using a small cookie scoop, roll cookies into balls and place on baking sheet, leaving a couple of inches between each. 7: Bake for 10-12 minutes. Five minutes into baking, flatten the cookie slightly with the back of a measuring cup. When removed, use a round cookie cutter and in a circular motion give the cookie a spin to make it perfectly round. 8: Let the cookies cool for about 20-30 minutes before filling with vanilla buttercream. 9: Make the buttercream by beating butter until smooth, adding vanilla extract, then powder sugar and combining, and finally adding in milk and beating until smooth. 10: Place buttercream in a piping bag, pipe frosting on the bottom of a cookie, and press another cookie on top. Repeat to make 6 cookie sandwiches.
