Berry Icebox Cake

This icebox cake is perfect for the Fourth of July and you can make it overnight, and leave in the fridge till ready to serve. The pudding is delicious with the layers of graham crackers and berries! Full recipe below.

Pour instant pudding mix into a medium mixing bowl. Add 2 and 3/4 cup of cold milk and stir till pudding thickens. Fold in one 8 oz. container of cool whip to pudding mix. In a 9x9 or 9x13 baking dish layout graham crackers as the base. Spread half of the pudding mix on top of graham crackers. Add strawberry and blueberries on top of the pudding in vertical lines. Repeat by adding graham crackers, remaining pudding and berries on top. Add one final layer of graham crackers on top of the berries. Take the other 8 oz. container of cool whip and spread on top of graham cracker layer. Optional add crush graham cracker to top and add additional berries. Place in fridge for minimum 6 hrs before serving, slice and enjoy!
