Place pan in the oven and preheat to 400 degrees F. In a medium bowl, whisk together the eggs and egg white. Add butter and milk. Whisk together flour, cinnamon, nutmeg and salt in a small bowl and add to wet ingredients till combined. Transfer batter into a piping bag. Remove the muffin pan from the oven. Generously spray with cooking spray. Fill each muffin cup about half way and sprinkle a little brown sugar. Bake for about 20 minutes or till golden brown! Remove the popovers. They should come out easily but if not you can run a knife around edges. Transfer to plate or cooling rack!
