* Crust: combine crushed wafers and butter. Using a small cookie scoop fill 12 cup muffin pan. Press crust down with fingers and place in fridge. * Cheesecake: beat softened cream cheese for two minutes till smooth. Beat in powder sugar and vanilla pudding mix. Pour in condensed milk and beat together till smooth, will be thicker. Remove from bowl and place heavy cream in bowl and whip together till stiff peaks form. Fold into cream cheese mixture. * Assembly: place a banana on top of your crust and scoop 2 tbsp of cream cheese mixture into each cup and smooth out. Place in fridge for minimum 6 hrs or overnight. * Topping: once set pipe on caramel topping, add a slice banana on top of caramel, add whip cream, crushed wafers and garnish with a wafer and banana! Enjoy.
