Cinnamon Banana Crumb Cake

This crumb cake is so moist and easy to make! The crumb topping is my favorite part! Step by step instructions below:)

1. Preheat oven to 350° F. Grease sides of a 9x9 baking dish. Place parchment paper on the bottom and grease as well. 2. Mash 4 bananas in a medium bowl and set aside. 3. Combine dry ingredients (flour, baking powder, cinnamon, salt) in one bowl and set aside. 4. Using a stand mixer or hand held mixer, beat 1 stick of butter for a couple minutes until fluffy. Add in 1 cup granulated sugar and continue to beat until combined. Add in 2 large eggs and 1 1/2 tsp vanilla extract. Add in mashed bananas. 5. Slowly add in dry ingredients and milk, alternating a little at a time until fully combined. 6. Make crumb topping by combining 2/3 cup flour, 2/3 cup brown sugar, 1/3 cup sugar, 1 1/2 tsp cinnamon, and 6 tbsp softened unsalted butter, mixing until crumbly (fork in the butter). 7. Pour half the cake batter into the prepared 9x9 dish and add a layer of crumb topping. Add the rest of the batter and smooth out with a spatula. Add remaining crumb on top. 8. Bake for 40-45 minutes until golden brown and a toothpick comes out clean! Let cool for 10-15 minutes. 9. Combine 1/2 cup powdered sugar and 2-3 tbsp milk in a small bowl for the icing. Drizzle over the cooled cake, cut, and enjoy!
