Lovers of pineapple, coconut, Piña coladas and cheesecake, this is a must try! Light, refreshing and easy to make! Our friends always love this one.

Beat cream cheese and sugar till smooth. Add coconut cream, vanilla extract, pineapple juice and combine. Fold in coolwhip and crushed pineapple. Pour mixture into crust and freeze for 3 hours. 40 minutes before serving, make whip cream by combining heavy whipping cream, powder sugar and vanilla extract till stiff peaks form. Take cheese cake out of freezer 30 minutes prior to serving and pipe whip cream swirls on top, add chopped pineapple and cherries for decoration! Note: if you like to refrigerate the cheesecake vs. freezing, it is recommended to put it in the fridge overnight, which will take approximately 8-10 hours to set.
