Easy No Bake Birthday Cake Mini Cheesecakes

1. Melt butter in microwave for 45 seconds.
2. Add graham cracker crumbs and melted butter in small bowl and stir. Set aside.
3. In a mixing bowl, beat cream-cheese for 2 minutes till smooth, with a hand held mixer or stand-paddle mixer.
4. Add sugar and beat till combine.
5. Add yellow cake mix to cream-cheese mixture, mix for 2 minutes.
6. Spatula in cool whip to cream-cheese mixture and beat on low speed for another 3 minutes.
7. Add rainbow sprinkles and mix for another minute till combine and smooth.
8. In a lined cupcake pan firmly press the crust into bottom of cupcake holders. We use a small ice-cream scooper to measure out the crust for each cup.
9. With a medium ice-cream scooper add cream-cheese mix into cupcake holders and let sit in fridge for at-least 4 hrs to set in fridge. We let ours sit over night.
