* Make the dough: Heat 1 cup of milk to about 100°F. Pour milk into bowl. Add in sugar and yeast cover with towel and let it sit for 5-10 minutes till frothy. On low speed add in eggs, butter, 3 tbsp of olive oil and salt. Butter will not be completely mixed in. Slowly add flour and beat for 2-3 minutes. Increase speed to medium and beat for 5 minutes till dough forms. The dough will be soft. With oiled hands form dough into ball and put in a greased mixing bowl in a warm area for it to rise (this is where we use the additional 2 tbsp of olive oil to grease the bowl and hands). About 90-120 minutes. * Preheat oven to 350°F once dough has risen. * Make Babka: Once dough has risen punch dough down and place on a floured surface. Cut dough in half. Work with one half of dough at a time. Roll dough out. Spread half of the Nutella leaving a 1” rim. Tightly roll the dough into a log and take a knife to cut the dough down the center. Criss-cross one half, cut side down, on top of the other half. Twist the two together and place in a greased 9x5 loaf pan with parchment paper. Let rise while preparing the other dough half. You may make 2 loaves, but we made 6 large Babka buns using a jumbo muffin pan. Repeat rolling out the dough and Nutella as you did with the first. Take a pizza cutter and cut long vertical strips. Twist vertical strips and roll them into a bun shape. Place in greased muffin pan. Bake both for 40 min and buns for 25 minutes. * Make Syrup: Bring water to a simmer over medium heat, stirring until the sugar is fully dissolved. Remove from the heat and brush on to babkas.
