These Cannoli pancakes are so good and the perfect breakfast treat! They are a chocolate chip, ricotta pancake with cannoli filling on top.

1. In a large measuring cup combine milk, eggs, vanilla extract and strained whole milk ricotta. Whisk together. 2. For the ricotta, wrap it in a paper towel 20 minutes prior and pat it down till the moisture comes out. 3. Combine all dry ingredients (flour, powder sugar, baking powder, cinnamon, salt) in a medium bowl. Pour wet ingredients into dry and combine. 4. Pour in chocolate chips into the pancake batter. 5. Before making the pancakes, prepare the cannoli filling and put it in the fridge. 6. Strain your ricotta as you did prior for your pancake mix, and beat in powdered sugar and vanilla. Fold in chocolate chips till combined. Place in piping bag or container in fridge till ready. 7. Grease pan and cook pancake for 2-3 minutes on each side. Use a 1/3 cup measuring cup to scoop pancake mix into the pan. 8. Stack cooked pancakes, pipe cannoli filling on top and add optional chocolate drizzle!
