To make the cupcakes. Preheat oven to 350 degrees F. Line 16 cupcake molds with paper liners. In the bowl of a stand mixer (or use a hand-held mixer) beat together the melted butter, brown sugar, vanilla, eggs, and pumpkin and Chai concentrate until combined. Add the flour, baking powder, baking soda, salt. Mix until smooth and no lumps remain in the batter. We mix on medium speed for about 3 minutes. Divide the batter evenly among the prepared pan. Transfer to the oven and bake 18-20 minutes. Remove and let cool. To make the frosting, combine all frosting ingredients in a stand mixer and beat at max high speed for about 3 minutes. There should be no chunks of butter and frosting should be smooth. Put frosting in a piping bag and put in the fridge for up to 10 minutes prior to icing the cupcakes! Frost each cupcake and sprinkle with cinnamon sugar.
