For the brownies: Preheat oven to 350°F. Melt 1/2 cup semi sweet chocolate chips in the microwave and combine with vegetable oil. In a separate bowl, combine granulated sugar, brown sugar, eggs, and 2 1/2 tsp vanilla extract. Whisk for 2 minutes and then use a handheld mixer for 3 minutes until the mixture doubles in size. Pour this into the chocolate-oil mix and beat together. Add in cocoa powder and 1/2 tsp salt, then mix. Slowly fold in the all-purpose flour. In a 9x9 baking dish lined with parchment paper, spread the brownie mixture evenly. Bake for 30 minutes. Take out of the oven and let cool completely. For the cannoli topping: While the brownies are cooling, combine strained whole milk ricotta cheese, mascarpone cheese, 1 tsp vanilla extract, powdered sugar, and 3/4 cup mini chocolate chips. Beat until smooth and then place the mixture into a piping bag. Assembly: Pipe the cannoli topping on top of the cooled brownies. If desired, melt a 4 oz. chocolate bar for a chocolate drizzle on top. Finish with additional mini chocolate chips.
