Delicious and easy blueberry crumb bars, perfect for a beach day, breakfast, or a sweet treat. Features a buttery oat crumble crust, a fresh blueberry filling, and a lemon glaze.

Preheat your oven to 350 degrees F. Line an 8x8 inch square pan with parchment paper or grease the pan well, and set aside. Crust: In a large bowl, whisk together oats, flour, brown sugar, and salt. Stir in melted butter and vanilla until it's a well-mixed crumble mixture. Set aside a little then half of the mixture; pour remaining into pan and press into an even flat layer with your hands. Set aside while you prepare the filling. Filling: In a medium bowl, toss blueberries, sugar, lemon juice, and flour until blueberries are completely and evenly coated. Pour mixture over top of crust and spread into an even layer. Crumble: Sprinkle the remaining crumble mixture over top of the blueberries as evenly as you can, and press down! Baking time: Bake for 30-35 minutes, until crumble and crust are golden and fruit is slightly bubbling. Let cool completely. We leave out for 30 minutes and then put into the fridge for a few hours before cutting! Once cooled we combined all glaze ingredients together and drizzle on top of the bars. Enjoy!
