Happy Friday! These mini cheesecakes are SO EASY to make! They are light and refreshing using Petit Pot French dessert. The balance of lemon and vanilla makes them special. They only take 15 minutes to whip up. Refrigerate for 6 hrs or freeze for 2 hrs and you are ready to go!

Make Graham cracker crust by combining Graham cracker crumbs and melted butter. Place baking cups in cupcake pan and add crust to bottom of each cup and press down. In a mixing bowl combine cream cheese, sugar, lemon juice, vanilla extract and beat til smooth. Add in heavy cream and whip for another 2 minutes. At this point you have a really nice creamy filling. Fold in 1 whole jar of Petit Pot lemon dessert to your mixture (optional). Fill baking cups with cream cheese filling and put in the fridge to set (approximately 6 hours). Assemble: top off cheesecake bites by piping on a layer of vanilla bean Petit Pot French dessert and adding whip cream. Lastly, add some lemon zest and a sliced lemon on top for decoration. Enjoy!
