Red Velvet Waffle Ice-cream Sandwiches

For the Waffle Mix: Combine 1 box of red velvet cake mix, 3 eggs, 1 cup milk, and 1/2 cup vegetable oil. Mix all ingredients together until smooth. Pour batter into a mini heart waffle maker and cook for 3-5 minutes per waffle.

For the Cream Cheese Drizzle: In a bowl, combine 4 oz. softened cream cheese, 1/2 cup powder sugar, 1 tsp vanilla extract, and 5 tbsp milk. Mix all together until the drizzle is smooth.

For the Whip-cream: In a separate bowl, combine 1/4 cup powder sugar, 1/3 cup heavy cream, and 1 tsp vanilla extract. Whip all ingredients together for 3-5 minutes until soft peaks form.

To Assemble: Stack your waffles and pour the cream cheese drizzle on top, adding a scoop of ice-cream and whipped cream. Alternatively, create waffle ice-cream sandwiches by placing a scoop of ice cream between two waffles, then topping with drizzle and whipped cream. Both options are delicious!
