Preheat your oven to 350 degrees F. Line an 8x8 inch square pan with parchment paper or grease the pan well, and set aside. Crust: In a large bowl, whisk together oats, flour, brown sugar. Stir in melted butter and vanilla until it’s a well-mixed crumble mixture. Set aside a little then half of the mixture; pour remaining into dish and press into an even flat layer with your hands. Bake for 15 minutes while you prepare your filling. Filling: In a mixing bowl, whisk together granulated sugar, brown sugar, cinnamon, nutmeg, ground ginger. Add in egg, egg yolk and vanilla and stir until blended. Mix in pumpkin then heavy cream. Pour filling on top of your crust layer. Crumble: Sprinkle the remaining crumble mixture over top of the pumpkin filling. Bake for 30 minutes, until crumble and crust are golden and pumpkin only slightly jiggles. Let cool completely. We leave out for 60 minutes and then put into the fridge for 20 minutes before cutting! You can eat them warm if you like! Once cooled we combined all whip cream ingredients together and beat for 2-3 minutes till you have soft peaks! Enjoy.
