Chocolate Mix/Layer: Pour chocolate chips into a microwave-safe bowl with 6 tbsp of unsalted butter and microwave for 1-1/2 minutes. Make sure to take the chocolate out of the microwave and stir every 15 seconds so it does not overheat! Next, in a lined cupcake pan, take about 1 tbsp of the chocolate mix and fill the first layer of the cups. Put in the freezer for 5 minutes to set, while working on the peanut butter mixture. Peanut-butter Mix/Layer: Scoop peanut butter into a microwave-safe bowl. Combine with the remaining butter (2 tbsp) and honey. Microwave for 30 seconds, taking it out every 15 seconds to stir. Remove the cupcake pan from the freezer and pour about 1 1/2 tbsp of peanut butter on top of the chocolate layer. Set back in the freezer for 8 minutes. Take remaining chocolate and top off the peanut butter cups with the final layer! Freeze for an hour to fully set and then take out to enjoy!
